There are many errors of kind MaxObserveredInterfacesReached showing up in metrics

This is a new kind of error that was introduced in the performance work. It means that new packets for a given have been observed on new interfaces, which normally should be added to the flow, but were not because of the maximum capacity on stored interfaces per flow.

This is not a critical error, but causes a loss of information (the flow should show more interfaces than it does)
